Such a busy day today...got off to a bad start with a little motorway incident purely due to age I think, ended up on the wrong motorway miles from where I should have been...day dreaming.
Had a very small part to play at the graduation of the Innovators in Health group at the School of Social Entrepeneurs, such an inspirational lot. Met some great people and head is buzzing with ideas so not much time to cook tonight hence -
Meat balls with spicy tomato sauce
from the freezer - lamb meat balls from Taylors farm
1 can tomatoes chopped and mixed with a generous table spoon of tomato puree, a
sprinkle of mixed herbs and a dash of tobasco.
Put the meat balls in an oven dish, cover with the tomato mix
and bung in the oven on a moderate heat.
Pop out to visit a nearby friend for a cuppa and when you get back the dish will be piping hot
and browning on top.
Top with sliced mozzerella cheese and return to oven until cheese has melted
Meanwhile toast some pitta bread, cut into chunks and serve with meat balls.
It was delicious scooping the cheesy, tomatoey sauce with the bread.

Satisfied and ready for bed now.... a good day!
