There really is no excuse for not getting our five a day in August, despite the quirkiness of the british weather there is so much available at this time of year. Vegetables are at their peak just now and need little preparation....fresh veg tastes great with just a smear of butter and a grind of black pepper.

But why stick to the familiar, try something new.

How about a fennel salad. First time I tried fennel was in Tunisia, I found it lovely and fresh and despite hating aniseed the delicate flavour is quite delicious.

I found this recipe for fennel salad that is so light and refreshing just a couple of things...

Zucchini = courgette

Arugula = rocket!! I had to google it!

You can leave the feta out if you like.
